Butterscotch Cookies

  • 2 1/4 cups flour
  • 1 teaspoon baking soda
  • 3/4 cup packed brown sugar
  • 1 cup butter, softened
  • 1/4 cup sugar
  • 1 (4 ounce) package instant butterscotch pudding
  • 1 teaspoon vanilla extract
  • 2 eggs, beaten
  • 2 cups butterscotch chips
  1. Preheat oven 350 degrees.
  2. Combine flour and baking soda.
  3. In a large bowl beat brown sugar, sugar, butter, pudding mix, and vanilla extract.
  4. Mix until well blended.
  5. Add eggs and mix well.
  6. Beat in the flour mixture.
  7. Stir in butterscotch chips.
  8. Drop by rounded teasponful and bake 10-12 minutes.
