Chicken Ltd. Casserole

  • 2 cups roasted or smoked chicken, deboned, chunked
  • 2 cups cooked brown rice or white rice
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 8 ounces sour cream
  • 1/2 cup champagne (white wine can be substituted)
  • 2 tablespoons fresh thyme
  • 2 tablespoons fresh tarragon
  • 1 teaspoon fresh rosemary
  • 1 tablespoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup bread crumbs

 

1. Preheat oven to 375 degrees.

2. In a large, lightly greased rectangular pyrex dish, layer cooked rice on bottom, followed by the chicken. Set aside.

3. In a medium mixing bowl, combine next nine ingredients together. Pour mixture over chicken in the baking dish. Sprinkle bread crumbs over the top.

4. Bake for 45 minutes at 375 degrees. Let stand for 5 minutes before serving. Serves 10.
