Orange Cinnamon Crisps

  • 1 cup sugar
  • 1 cup shortening
  • 1 egg
  • 1 teaspoon vanilla
  • grated rind of 1 large orange
  • 1 tablespoon orange juice
  • 2 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt

  • ¼ cup sugar
  • 2 teaspoons cinnamon

 

1. Preheat oven to 350 degrees.

2. Beat 1 cup sugar, shortening, egg, vanilla and orange rind together. Add orange juice. Stir in flour, baking soda and salt.

3. Shape dough into walnut-sized balls and roll in the cinnamon-sugar mix. Place dough balls on a cookie sheet and flatten with the bottom of a glass dipped in additional sugar.

4. Bake for 10 to 15 minutes or until delicately browned.
