Lemon Snowbars

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar, sifted
  • 1/2 cup butter, softened
  • 2 egg
  • 3/4 cup granulated sugar
  • 3 tablespoons lemon juice
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon baking powder
  • powdered sugar

 

1. Stir together flour and powdered sugar; cut in butter till mixture clings together. Pour into ungreased 8 x 8 x 2 inch baking pan. Bake 350 for 10 to 20 min.

2. In mixing bowl beat eggs; add granulated sugar and lemon juice. Beat till slightly thick and smooth, about 8 to 10 min.

3. Stir together 2 tablespoons flour and baking powder; add to egg mixture. Blend just until all is moistened. Pour over baked layer. Bake at 350 for 20 to 25 min.

4. Let cool and then sift powdered sugar over top.
