Meringue Cookies

  • 4 egg whites
  • pinch of salt
  • pinch of cream of tarter
  • 1 1/3 cups granulated sugar
  • 6 oz. mint chocolate chips
  • 6 oz. semi-sweet chocolate chips

 

1. Preheat oven to 350 degrees F.

2. Beat egg whites until frothy. Mix in salt and cream of tarter.

3. Gradually add sugar while mixing. Beat until stiff but moist.

4. Fold in the mint and semi-sweet chocolate chips.

5. Drop on cookie sheets and Place in pre-heated oven that has been turned off. Leave for at least 4 hours or overnight is better.

Makes about 4 1/2 dozen cookies
