Pumpkin Roll

  • 3 eggs
  • 3/4 cup flour
  • 3/4 cup pumpkin (Libby's 100% pure pumpkin)
  • 1 cup sugar
  • 1 teaspoon baking soda
  • wax paper

 

1. Cut wax paper to fit jelly roll pan.

2. Mix the above ingredients and pour into pan lined with wax paper. Make sure that the mixture is spread out evenly.

3. Bake at 350 degrees for 15 minutes. Take out of oven and roll up pumpkin and wax paper jelly roll fashion. Refrigerate until cool. When cool follow the instruction below.

 

Filling:

  • 1 (8 oz) package cream cheese, softened
  • 1/2 stick margarine, softened
  • 1 teaspoon vanilla
  • 3/4 cup powdered sugar

 

1. Mix all ingredients together.

2. Unroll the pumpkin roll. Spread filling mixture evenly over pumpkin roll. Roll again, taking off wax paper and refrigerate.
