Ricotta Cookies

  • ¼ pound butter, softened
  • ¼ cup Ricotta cheese
  • 1 teaspoon vanilla
  • 1 cup sugar
  • 1 egg
  • 2 cups sifted flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt

 

1. Blend softened butter and Ricotta cheese until creamy. Add vanilla and mix well.

2. Gradually add sugar, beating until well blended.

3. Add egg and mix well. Slowly stir in dry ingredients and blend well.

4. Drop teaspoon-sized cookie dough onto greased baking sheet.

5. Bake at 350 degrees for 10 min.

Bakes 30 - 36 cookies
