Sweet Potato Casserole

3 cups cooked sweet potatoes (I bake mine rather than boil them)
1 cup sugar
1 stick butter
2 eggs
1 teaspoon pure vanilla extract

Crust
1/3 stick soft butter
1 cup brown sugar (light or dark brown sugar will work)
1/3 cup plain flour
1 cup chopped pecans

1. Mash all sweet potato ingredients together and put in a greased casserole dish.

2. Mix all the crust ingredients and pour over the sweet potatoes.

3. Bake at 375 degrees for 30 minutes.

This can be made ahead of time.
After taking out of the oven, let cool, cover and place in the refrigerator. Then microwave with the casserole lid on for about 8 minutes right before serving.
